In Morocco, Friday couscous is not a meal. It is an institution.
Every Friday, families gather around a single large communal dish — couscous piled high with vegetables, slow-cooked meat, and broth ladled over the top at the table. You eat with your right hand, from the section of the dish in front of you, and you do not rush. The meal can last two hours. That is not considered slow. That is considered correct.
I have been trying to get one of my groups an invitation to a real Friday couscous since I arrived in Marrakesh. Last month it finally happened.
